Lime & Coriander Chicken Skewers

1 lime, juice and rind
2 tbs Schwartz Easy Chopped Coriander
2 tbs runny honey
1 tsp Schwartz Chopped Garlic
1 tsp dark soy sauce
450 g (1 lb) skinless, boneless chicken breasts
6 baby leeks, trimmed
2 tbs olive oil
sea salt and black pepper
Place the lime juice and rind in a bowl with the Easy chopped coriander,
honey, garlic and soy sauce. Season well. Cut the chicken into small
pieces and add to the marinade. Stir and leave for 20 minutes.
Cut the leeks in half, widthways and thread onto 4 dampened wooden
skewers with the chicken pieces. Drizzle with the oil and cook under
a medium grill or over the barbecue for 20 minutes, basting and
turning occasionally.
Serve the chicken with a small bowl of light soy sauce mixed with
a pinch of Chinese Chilli, Garlic and Ginger stir fry seasoning.
