Oysters and clams can be heated in the half-shell on the grill over low heat. About 10 minutes cooking will poach them satisfactorily. They should not be seasoned before cooking.

Mussels are not suitable for this treatment.

Live crabs must be kept overnight in a tub of saltwater to which a cup or two of cornmeal has been added to allow them to purge the sand they ingest.

The body flesh of crabs and lobsters bought at the market must be removed from their shells and their spongy intestinal tracts removed, however the claws need not be disturbed. After cleaning the body flesh, return it to the shell for grilling. Add a bit of dry white wine.
