Luxurious Aubergine Cakes
Ingredients:
1 aubergine
3 tablespoons runny honey
4 tablespoons olive oil
1 Chilli
1 inch ginger
1 clove garlic
6 sun dried tomato
6 pieces of Feta cheese
6 pieces of Basil or Mint (plus extra to garnish)

Method:
Using a mandoline or a sharp knife, cut 1/4 inch slices of aubergine along the length of the vegetable. Place these slices, with the chilli, over medium coals so they char a little and go soft. Remove all items from the barbie and slice the chilli up removing the seeds. In a pestle and mortor, bruise the slices of chilli, grate in the ginger and garlic and add the honey and olive oil. In a dish, layer the slices of aubergine and pour over the marinade. Leave for a few minutes and then place a sun dried tomato, a piece of Feta and a basil leaf at the end of a slice of aubergine and roll up, ensuring that there is plenty of that gooey marinade in it. Secure with a cocktail stick if you can and then put back on the coals for a minute either side.
One thing that you can do for the Wow! Factor is to cut up a French baguette into half inch slices on the diagonal. Whilst the aubergine is in it's marinade, toast the slices of bread on the coals on both sides. Once the cakes have been cooked, place on top of each slice of bread and garnish with a Basil leaf. Absolute heaven!
