Most people new to barbecuing simply throw some
meat on the barbecue, cook it and serve it to
their friends on a hot summer day. The beauty
of barbecuing means that this alone will probably
be enough to impress! However, when simply chargrilled
meats lose their appeal, there is an alternative
-add some herbs and spices to give your meals
a revitalising new flavour.
Adding some herbs, spices or a mixture of the
two, before putting the meat on the barbecue will
really enhance the meat's taste. You could, for
example, rub a mixture of basil, tarragon, chives,
and garlic onto steaks before grilling them. Try
it at your next barbecue and notice the difference!

Or how about making a marinade from yoghurt,
tomato puree, curry powder, garlic and coriander
leaf. Add some cubed chicken breasts and marinade
for one hour in the fridge. Then make some kebabs
by putting them on a skewer and grill. Hey presto
